DENOMINATION: Typical Geographical Indication
ZONE OF ORIGIN: Tuscany-Pisa
SOIL: Generally clayey with a good presence of marine skeleton
VINES: 50% Sangiovese, 50% Canaiolo
VINIFICATION: The hand-picked grapes are then de-stemmed and softly pressed before being sent to special vertical roto-fermenters. In the tanks, the must is stirred by means of shovels in order to obtain maximum extraction as well as the separation of the stones responsible for the aggressive tannins. The must is fermented exclusively using natural yeasts present on the grape skin, controlling the temperature and oxygen level inside the tank.
AGING: The wine rests for 12 months in tonneau where the malolactic fermentation takes place, followed by another 6 months in cement tanks and finally, a refinement in the bottle for 6 months before being released on the market.
SERVING TEMPERATURE: 18 ° C
